It’s an easy, crowd-pleasing meal perfect for Mexican-American comfort food lovers looking for a fun twist on traditional pizza.

Ingredients

Scale

Meat and Seasoning

  • 1 pound ground beef or ground turkey
  • 1 packet taco seasoning
  • ⅓ cup water

Other Layers

  • 1 can (16 oz) refried beans
  • 8 small flour tortillas
  • 1½ cups shredded Mexican blend cheese
  • ½ cup enchilada sauce or taco sauce

Toppings

  • ¼ cup diced tomatoes
  • ¼ cup sliced black olives (optional)
  • 2 green onions, sliced

Additional

  • Cooking spray or oil for greasing

Instructions

  1. Preheat and Prepare the Baking Sheet. Preheat your oven to 400°F and either lightly grease a large baking sheet with cooking spray or line it with parchment paper for easy cleanup.
  2. Cook the Meat. In a skillet over medium heat, add the ground beef or turkey and cook, stirring occasionally until fully browned, about 6 to 8 minutes. Drain any excess fat to keep it from being greasy.
  3. Season the Meat. Return the skillet to the heat and stir in the taco seasoning packet and ⅓ cup water. Let it simmer for 2 to 3 minutes, stirring occasionally, until the mixture thickens and is well combined.
  4. Heat the Refried Beans. While the meat simmers, gently warm the refried beans in a small saucepan or microwave until they’re spreadable and easy to work with.
  5. Assemble the First Layer. Arrange 4 tortillas evenly on the prepared baking sheet. Spread a generous layer of warm refried beans over each tortilla.
  6. Add Meat on Top. Spoon the seasoned taco meat evenly over the refried beans on each tortilla, spreading it out to cover the surface.
  7. Build the Second Layer. Place another tortilla on top of each layered tortilla and meat stack.
  8. Add Sauce and Cheese. Spread enchilada sauce or taco sauce over the top tortillas, then sprinkle each with the shredded Mexican blend cheese.
  9. Top with Fresh Ingredients. Scatter diced tomatoes, black olives if using, and sliced green onions evenly over each Mexican pizza for added flavor and texture.
  10. Bake the Pizzas. Place the baking sheet in the preheated oven and bake for 10 to 12 minutes. The pizzas are ready when the cheese is melted, bubbly, and slightly golden.
  11. Cool and Serve. Remove from the oven and let the pizzas cool slightly before slicing each into quarters. Serve warm and enjoy!

Notes

  • For a crispier tortilla base, lightly pan-fry the tortillas in a small amount of oil before assembling the pizzas.
  • Add jalapeños, sour cream, or guacamole as toppings after baking for extra flavor and creaminess.
  • To make a vegetarian version, omit the meat and double the refried beans or add sautéed vegetables such as bell peppers and onions.
