Sausage and Vegetables

  • 1 lb beef sausage links (Andouille or smoked preferred)
  • 1 tbsp olive oil
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 yellow onion, sliced
  • 1 tbsp Cajun seasoning
  • 1/2 tsp garlic powder

Sandwich

  • 4 hoagie or sub rolls, split and toasted
  • 1/2 cup mayonnaise
  • 1 tbsp Creole mustard (or Dijon)
  • Optional: hot sauce to taste


Instructions

  1. Brown the sausage: Heat olive oil in a large skillet over medium-high heat. Add the sliced sausage and cook until browned, about 5–6 minutes. Remove sausage from skillet and set aside.
  2. Sauté the vegetables: In the same skillet, add the sliced green and red bell peppers along with the sliced yellow onion. Sauté for 6–8 minutes until the vegetables are tender and slightly caramelized.
  3. Season the mixture: Stir in the Cajun seasoning and garlic powder to the sautéed vegetables. Return the browned sausage to the skillet and toss everything together to combine the flavors thoroughly.
  4. Prepare the sandwich spread: In a small bowl, mix the mayonnaise and Creole mustard until smooth. Optionally, add hot sauce to your preferred level of heat here or on the sandwich later.
  5. Assemble the sandwiches: Spread the mayo and mustard mixture evenly onto each toasted hoagie roll. Fill each roll generously with the sausage and pepper mixture.
  6. Serve: Drizzle additional hot sauce if desired and serve the sandwiches warm for the best flavor experience.
