Sweet Potato Fries

- 1 teaspoon ground chipotle powder
- 1/2 teaspoon chili powder
- 1/4 teaspoon paprika
- 1/4 teaspoon cumin
- 1/4 teaspoon garlic powder

- Prepare the dipping sauce: In a small bowl, combine mayonnaise, lime juice, ground chipotle powder, chili powder, paprika, cumin, and garlic powder. Mix until the spices are thoroughly integrated. Cover and refrigerate for at least one hour to allow the flavors to meld.
- Preheat the oven: Set your oven to 400°F (200°C) so it reaches the perfect temperature for roasting the sweet potatoes.
- Cut and coat the sweet potatoes: Peel the sweet potatoes if you prefer, then slice them into long sticks similar to French fries. Place the cut fries in a large Ziploc bag, add enough vegetable oil to lightly coat all pieces, seal the bag, and toss gently to coat evenly.
