Tofu Scramble
- 14 to 16 ounces firm tofu
- 1/2 cup unsweetened nondairy milk
- 3 tablespoons nutritional yeast

- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon kala namak (black salt)
- 1 tablespoon oil (for cooking)
Wrap Assembly
- 6 large tortillas
- 12 slices vegan cheese
- 3 small avocados, sliced
- 4 cups chopped kale, sautéed
Instructions
- Prepare the tofu: Crumble the firm tofu into chunks and set aside to get ready for cooking.
- Make the sauce: In a bowl, combine the unsweetened nondairy milk, nutritional yeast, Dijon mustard, turmeric, paprika, garlic powder, onion powder, and kala namak. Mix well until fully blended.
- Cook tofu: Heat oil in a nonstick skillet over medium-high heat. Add crumbled tofu and cook until it turns lightly golden and begins to firm up, stirring occasionally to prevent sticking.
- Add sauce to tofu: Pour the prepared sauce over the cooked tofu. Gently fold the mixture together and continue cooking for an additional 2 minutes to allow flavors to meld.
- Assemble the wraps: Lay out each large tortilla, then layer with vegan cheese slices, sliced avocado, sautéed kale, and the tofu scramble mixture. Fold the tortillas securely to form wraps.
- Optional final step: For a warm, slightly crisp finish, heat each assembled wrap in the skillet over medium heat until the tortilla turns golden brown and the cheese begins to melt.
